Christmas 2015 with the Blue Platter #1

It’s a baby shower!  One of our ‘claimed’ kids is having her first baby, so we are showering her before her January due date.

One of my favorite christmas cookie recipes is from an old Hellman’s Mayonnaise cookbook.  And yes, it does matter whether you use Hellman’s brand or not!

Chocolate Mounds

1 1/2 C sugar

1/2 C Hellmans or Best Foods Real Mayonnaise

4 squares (1 oz each) unsweetened chocolate, melted

2 eggs

2 tsp vanilla

2 C unsifted flour (my fav brand is White Lily)

2 tsp baking powder

1/4 C confectioners sugar (or granulated, or Demorara)

In large bowl with mixer at high speed beat first 5 ingredients 2 minutes.  Stir in flour and baking powder until well mixed.  (at this point I refrigerate the dough in the mixing bowl for about 20 minutes – makes the next step less messy and easier).

IMG_5005Roll dough 1 tablespoon full at a time into balls.  Roll each ball in sugar.  Place 2 inches apart on ungreased cookie sheets.  Bake in 350 degree oven 12 minutes (convection = 325 degrees 9 minutes).  Transfer to wire rack.  Makes 4 dozen.

 

……and here is the finished product along with Bill’s microwave peanut brittle and Becky’s famous thumbprint cookies all dressed in blue – since our young lady is expecting a boy!
