It’s a baby shower! One of our ‘claimed’ kids is having her first baby, so we are showering her before her January due date.
One of my favorite christmas cookie recipes is from an old Hellman’s Mayonnaise cookbook. And yes, it does matter whether you use Hellman’s brand or not!
1 1/2 C sugar
1/2 C Hellmans or Best Foods Real Mayonnaise
4 squares (1 oz each) unsweetened chocolate, melted
2 tsp vanilla
2 C unsifted flour (my fav brand is White Lily)
2 tsp baking powder
1/4 C confectioners sugar (or granulated, or Demorara)
In large bowl with mixer at high speed beat first 5 ingredients 2 minutes. Stir in flour and baking powder until well mixed. (at this point I refrigerate the dough in the mixing bowl for about 20 minutes – makes the next step less messy and easier).
Roll dough 1 tablespoon full at a time into balls. Roll each ball in sugar. Place 2 inches apart on ungreased cookie sheets. Bake in 350 degree oven 12 minutes (convection = 325 degrees 9 minutes). Transfer to wire rack. Makes 4 dozen.
